Ginger

You know Christmas is coming when your hubby keeps reminding you about getting Mariah Carey's Christmas CD, and playing it and dancing to it with your bubba. And you get the incessant urge to bake gingernut cookies (for some reason, I associate gingernut cookies with Christmas)! So today, we did both. Got MC's Christmas tunes at BigW and baked two batches of gingernut cookie, and all just in time for the impending storm that's been brewing.

I'm all about a no-fuss, less is more approach when it comes to baking; the lesser the ingredients, the more attractive the recipe. Hence, this gluten free gingernut cookies recipe by Five Brother and One Sister was a winner for me! Here's the recipe:



Ingredients:
50g butter
4tbsp maple syrup
1/4 cup brown sugar
1 & 1/2 cup gluten free self-raising flour
1 rounded tablespoon of ground ginger (I love when the ginger taste lingers after each cookie!)

Method:
Preheat the oven at 160 degrees Celsius.
Melt the butter, sugar and syrup over low heat in a large saucepan. Remove from heat and let cool.
Sift GF self-raising flour and add ginger into the mixture. Mix well.
Spoon or roll out macadamia-sized balls of dough (or use a cookie cutter to make Christmas trees, get creative) and place it on to a baking tray lined with baking paper.
Pop it in the oven for ten-fifteen minutes. Remove and cool the cookies on a rack.


Enjoy your gingernut cookies with a hot cuppa coffee! Bliss!
